I was stalking the Trader Joe's cheese section for any of the four peppery cheeses that I've designated as "buy again"--and completely struck out. But my eye fell on this, so I decided to give it a try. It becomes #5 on that list.
It's a medium heat--enough to be interesting and lively without being searing or overpowering. It slices easily, even very thin. My only nit to pick is that most of the heat is concentrated in the dark orange rind, with less infused through the body of the cheese. But I can live with that.
Will I buy it again?
Yes.
